Versatile Jell-O Salad

1 large package cherry Jell-O
2 cups boiling water
1 can (15 ½ oz.) crushed pineapple
8 oz. cream cheese, softened
1 cup chopped pecans
2 cups whipping cream

Dissolve Jell-O in boiling water. Set bowl in refrigerator; check after 20 minutes, stirring occasionally. Do not let it set up, but let it thicken, so it you will still be able to stir it. Meanwhile, soften the cream cheese, slowly add juice from pineapple and stir until smooth then add the pineapple and nuts, mix thoroughly. Stir cream cheese mixture into thickened Jell-O, put back into fridge to thicken. So not allow it to set up completely. Whip the whipping cream, adding vanilla and sugar to taste. Once Jell-O mixture is thickened, fold in whipping cream until it is completely incorporated and you have a nice uniform color. Refrigerate until completely set.
